So often we hear people say they just can’t keep up a healthy eating program while traveling on vacation and this seems to include breakfast. This is one of the reasons why my hubby and I often chose an Airbnb or similar when out of town. We like to cook a few of our meals in-house, especially the simple ones. Since this is not an option for everyone and the temptations are likely greater when your “cook at home” options are more limited, It is SOO POSSIBLE!

I have actually found I am more open to trying new things while on vacation.  And, we have found what better way to find the “good places’ than asking the locals. We have found the best breakfast joints by going to where the locals eat.

A while back my hubby and I were staying in Del Mar, California at the L’Auberge Del Mar (beautiful place by the way!) The concierge recommended the Pacifica Breeze Cafe for breakfast…If you ever get the chance to go, order the Del Mar Power Scramble>>>AMAZING!  It provided lots of options that supplied plenty of energy for our sight-seeing day ahead. We found that a lite snack in the afternoon and then an early-ish dinner (we did have a 3 hour time change to consider) with a beautiful wine pairing was all we needed to feel satisfied all day long.

So next time you’re traveling and looking for a “good place”, ask a local and they will likely direct you to a hidden gem…I have posted my version below so try it at home.  Who knows, maybe it will become your weekend “go to” for brunch.

DEL MAR POWER SCRAMBLE (served as a deconstructed taco)

  • scrambled eggs (egg whites, tofu or similar)
  • kale
  • salsa (fresca, verde…your choice)
  • black beans
  • tortilla (corn or flour)

Each item is piled on the plate and the joy of eating it increases as you create each bite!  YUM!
