Thanks to some inspiration from CleanFoodCrush, my 23 yr old adulting son and I rocked-out these Grilled Chicken Skewers in about 20 minutes. Since these skewers are tasty, super easy, and simple to make, a few little kitchen lessons could be taught along the way. (Looking for other amazing recipes? ADVICE: Start cooking with your kids while they’re in grade school and teach knife handling, measuring, and basic kitchen skills. Doing so will make their adult life so much easier.
As we sat and ate every bit of this amazing dish together, I asked for his review…
His comments: “Watch the Cayenne…it’s easy to overdo it!” and “Hey, what wine would you pair with this?”…
I chuckled and said that since he was over 21 we’d start the Kitchen 201 lesson, wine pairings.

Grilled Chicken Skewers + Homemade Tzatziki Sauce (serves ~4)

Soak wooden skewers in water for about 20 min. + preheat grill
Tzatziki Sauce:
- 1 cup plain whole Greek yogurt
- 1/2 cup seeded, grated organic cucumber (I used an English cuc)
- 3 Tbsp Chopped fresh dill
- 2 Tbsp fresh lemon juice
- 3 fresh garlic cloves, minced garlic
- sea salt + fresh black pepper to taste
Combine all ingredients for sauce in a bowl, taste test and adjust if desired and then refrigerate until needed.
Chicken Skewers:
- 1 1/2 lbs boneless, skinless chicken breast, cut into 2-inch pieces
- 1 Tbsp avocado or olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp cayenne
- sea salt and fresh ground pepper to taste (approx 1/4 tsp each)
Place chicken in a bowl, sprinkle all ingredients above and mix well. Thread on skewers and place on preheated grill (Med-High) Cook about 7 min until chicken is cooked through, flipping them a couple of times during cooking.
Serve with fresh greens, extra cucumber, tomato, pita bread and a lemon wedge.
